Kids Love This Chili Recipe – 12 Servings
2 Tablespoon Olive Oil
2 Medium Onions
2 Pounds Ground Beef
5 Tablespoons Chili Powder
4 Tablespoons Ground Cumin
2 Tablespoons Garlic Powder
3 Teaspoons Salt
1 Teaspoon Ground Pepper
4 Tablespoons Sugar
3 Cups Beef Broth
2 (15oz) Cans Petite Diced Tomatoes
2 (16oz) Cans Red Kidney Beans
2 (8oz) Can Tomato Sauce
4 Tablespoons Tomato Paste
1 (16oz) Jar Salsa
1 (12oz) Bag Frozen Corn or 4 ears of Fresh Corn (sliced off the cob)
Add the olive oil to a large soup pot, heat oil on medium, add onions and cooky until they are glassy.
Stir occasionally. Add ground beef to the onions. Break up the ground beef as it cooks. Cook until the beef is browned and throughly cooked. Add the spices, salt, pepper and sugar. Stir well.
Add the beef broth, tomatoes (with juice), tomato paste and tomato sauce. Stir well. Drain and rinse the beans. Add the beans and the corn to the post. Gently stir so you don’t break the beans.
Bring to a low boil. Lower heat to low and simmer (uncovered) for 30 minutes. Gently stir as needed. Let the chili rest and cool for 10 minutes before serving.
I love to make the day before I am serving. Overnight in the fridge blends the flavors beautifully. Allow the chili to cool and add to refrigerator friendly containers. Store overnight and reheat on the stove top or in a crockpot.

Toppings! We love to top with corn chips, green or white onions, sour cream, bacon bits, cheese, lime and even avocado.
